First of all, understand: Sugar = Carbohydrate (scientific name) and not all carbohydrates are sweet to the palate. We most commonly find carbohydrates in rice, potatoes, cakes, bread, pasta, ice cream, cookies and even cereals. And you basically NEED to understand about them:
- That there are simple and complex
- That their relationship with other foods, especially simultaneous consumption, can radically change the way they are absorbed, metabolized, used, “harnessed”, stored and even neutralized/eliminated from the body.

It's “fashionable” to talk generically about “Sugar is bad for you”, BUT the truth is that the main problem, as with most things, is excess: in the last 100 years, humanity has increased its consumption of sugars (carbohydrates) by more than 20x! Carbohydrates are fundamental to life, in a variety of ways (composition of genetic material, energy, etc).
